Bouchon & Bouchon Bakery
World-renowned chef Thomas Keller wanted to create a boulangerie in Napa County’s Yountville that would both serve locals and prepare breads and pastries for his restaurants. In the first of several collaborations, Keller brought in Paul Kelley Architecture to handle the challenging project. Under Kelley’s direction, two shops were combined, gutted and redesigned, and the combined structure was renovated to accommodate the chef’s requirements — including a custom bread oven from Europe. As Keller had hoped, the bakery/café became a popular gathering place. Kelley then undertook the reconstruction and expansion of the kitchen in the accompanying full-service restaurant, Bouchon. Working within strict town entitlements, Kelley gutted and reconstructed the building shell, later expanding it to provide a new kitchen, chef’s office, storage, updated utilities and systems, and trash/recycling areas.
